Roasted Peppers with Eggplant Parmesano Sandwich



1 jar roasted peppers
Long shredded Romano Grating Cheese

Toasted rolls
Butter
Garlic powder, oregano
Slices of mozzarella cheese

Toast the buns with butter on them. Sprinkle with oregano, garlic powder and grating cheese. Place the eggplant on the roll with a thick slice of mozzarella cheese. Top with roasted peppers. Sprinkle with more grating cheese, oregano and salt, pepper to taste.
